If you’re still sharpening your knives with a stone, you need to get with the times. It’s the 21st century and we have robots for that stuff now, so there’s no reason you should continue to hone your cutlery like a caveman. 

Electric blade sharpeners have been around for ages now, and while they do have certain advantages over their old-fashioned counterparts, most of them still have one big drawback: they aren’t adjustable. Knives tend to come with a wide variety of shapes, sizes, and cutting edges, so the key to keeping them razor sharp is knowing the proper angle to sharpen them with. If your blade has a cutting edge angle of, say, 11 degrees, and you use an electric sharpener with a fixed 18 degree sharpening angle, you’re going to take off more steel than you should, and also end up making the knife slightly duller than it was originally.

Sharpening with the appropriate angle will not only make your knife sharper, it’ll extend its lifespan by taking off a minimal amount of steel each time you hone it down.
